Is there a way with a email workflow to have conditional statements in them?

Scenario: I've created a list of check boxes for people to check to select if that office is working on the project for us in IT. I want an email to go to our help desk system that lists all the fields that have changed (been checked) so we can setup replication for that job. Workflow isn't the issue its how to present that data with the email notification. Any suggestions?
